Border Grill Sweet Potato and Black Bean Tacos with Corn Salsa

Inspired by watching the Border Grill episode of Jon Favreau's The Chef Show. The key to making these great is using a three cheese mixture (I used Cojita, Jack, and Manchego) and grilling small piles of the cheese directly on a skillet or flat top (a la Plancha). Place a homemade corn tortilla on top of the cheese, flip and finish the taco by loading it with roasted sweet potatoes, sauteed black beans, roasted corn and Poblano pepper salsa.

Salsa ingredients: char grilled corn and pablanos, fresh red bell pepper, red pepper onion, cilantro, avacado oil, red wine vinegar, salt and pepper.
