New Year's Collard Greens

I make some version of these every New Years- they are so good, I should make them more...
Ingredients
- Olive oil
- Thick cut bacon (about 2 pieces per pound of collards) - chopped into 1/2" pieces
- Yellow onion - chopped
- Garlic cloves
- Crushed red pepper flakes
- Collard Greens - stems removed and chopped
- Chicken broth
- Apple cider vinegar
- Sugar
- S&P
Directions
- Heal oil in large pot or dutch oven
- Saute bacon until it begins to brown
- Add onions, garlic and red pepper - saute until onions and garlic soften
- Add collards in bunches - stirring and allowing to cook down until more can be fit into pot
- Once all collards are in pot, add chicken broth and cook collards until they are tender but still brilliant green, about 30 minutes - remove from heat.
- Before serving, return to heat and stir in vinegar and sugar to taste and cook until well incorporated (about a minute)
- Add salt and pepper to taste right before serving
