New Year's Collard Greens

I make some version of these every New Years- they are so good, I should make them more...

Ingredients

Directions

  1. Heal oil in large pot or dutch oven
  2. Saute bacon until it begins to brown
  3. Add onions, garlic and red pepper - saute until onions and garlic soften
  4. Add collards in bunches - stirring and allowing to cook down until more can be fit into pot
  5. Once all collards are in pot, add chicken broth and cook collards until they are tender but still brilliant green, about 30 minutes - remove from heat.
  6. Before serving, return to heat and stir in vinegar and sugar to taste and cook until well incorporated (about a minute)
  7. Add salt and pepper to taste right before serving
