Another New Year's good luck tradition- this version was inspired from a Todd Richards' version in the Jan 2021 edition of Food and Wine magazine.
Ingredients
- 1lb bag of frozen black-eyed peas - thawed
- Avocado oil (or other vegetable oil)
- 4 strips thick cut bacon - chopped into 1/2" pieces
- 1 medium yellow onion - chopped
- 2 turnips, peeled halved and cut in to wedges
- Salt and pepper
- 2 celery stalks, cut in to 1/4" slices
- 4 garlic cloves, minced
- 4 dried bay leaves
- Smoked paprika
- Ground cumin
- Dried thyme
- 3-4 cups vegetable stock
- Cooked brown rice (1 cup before cooking, cooked per instructions)
- 4 scallions, chopped- green only
Directions
- Heat oil in large stock pot or dutch oven
- Add bacon and cook until slightly browned
- Add turnips, onion, salt, pepper, and cook until starting to soften.
- Add celery, garlic, bay leaves, spices and cook stirring constantly until fragrant.
- Add peas and chicken stock and bring to a simmer over med-high heat.
- Reduce heat, cover and cook, stirring occasionally until peas are tender (about 10 minutes)
- Remove from heat and let stand for 10 minutes.
- Remove bay leaves, add S&P to taste, serve over rice and top with scallions
