Grilled Pork Chop with Sauteed Apples and Homemade Onion Rings

Looking for a more creative way to serve these amazing Berkshire Heritage Pork Chops. I prepped the apples by creating a caramel (sugar, water, lemon juice reduction) and then sauteing in butter with a splash of ginger brandy (random flavor which was hanging out in the liquor cabinet since an Erin holiday cocktail creation). The onion rings were dredged in a beer batter and then deep fried in canola oil at 350 deg until golden brown. Served with a side of collard greens.
